Recipe for vegan carnival doughnuts




Vegan doughnuts or doughnuts are made of a simple yeast dough without egg and milk and are deep fried and then filled with the jam of your choice.

Since most bakers unfortunately do not have vegan doughnuts in their assortment, I have to resort to making them myself if I don’t want to go empty-handed.  But not bad at all, because it’s not that hard to make them yourself!.

You can easily prepare a yeast dough without egg and milk. The following ingredients make up the dough

Water (or vegetable milk)
You will also need plenty of high-heat, neutral oil for frying. Last but not least, choose your desired filling, for example a jam, which you fill into the particles with a piping bag*.


Preparation of the vegan doughnuts
Knead the yeast dough.
Let rise and shape a bit and let rise again.
Now deep fry and then let cool.
Fill and glaze if necessary
Of course you can fry without a deep fryer: Heat the oil in a pot, put the dough in and let it simmer for a few minutes.

The fine tuning is the filling and glazing, if desired. I decided against a glaze here. Instead, there’s a bit of powdered sugar on top.

But a jam filling is a must! To do this, drill a small hole in the side and squirt the jam in with a piping bag. You can see my recipe as a base and implement filling and glaze according to your wishes.

For the dough
330 g flour
100 ml water lukewarm
1/4 cube yeast
50 g sugar
50 ml oil neutral
jam for filling e.g. rosehip
Powdered sugar for sprinkling
500 ml oil for frying
Dissolve the yeast in lukewarm water. Mix the dry ingredients, stir in the liquid ingredients and knead for 3-5 minutes to form a smooth dough (the easiest way to do this is with a food processor).
Put the dough in a bowl and let it rise, covered with a damp cloth, for half an hour.
Knead the dough again and then divide it into 8 equal parts. Form balls from them and place them on a baking paper and press them a little flat. Now let rise again for half an hour.

Heat the oil for frying. Check the temperature with a wooden stick or a thermometer. Bubbles should form on the wooden stick, but the stove should not be on the highest setting. Fry over medium heat for about 4 minutes per side or until golden brown in color. When doing this, only add enough doughnuts at a time to the pan (or deep fryer) so that they can still float freely.
Once both sides are golden brown, drain the excess fat on a paper towel.
Using a piping bag, fill the cooled doughnuts with jam and sprinkle with powdered sugar.
The doughnuts taste best on the same day.
