Green curry shrimp (Thai)



ingredients :
500 g of raw and peeled shrimp
1 onion
1 piece of ginger
2 cloves of garlic
3 green onions
1 teaspoon of honey
1/2 cup chicken broth
1/2 cup of coconut milk
1 tomato
1 small bouquet of fresh coriander
1/2 lime
1 tablespoon of green curry
Optional: chilli pepper if you like spicy dishes and 2 pinches of yuzu zest

Preparation :

1- Peel and finely chop the onion, garlic and green onions. Grate the ginger if using fresh. Cut the tomato into pieces. Chop the coriander.

2- Pour a trickle of oil in a frying pan and brown the green onions. Then add the ginger, garlic and green onions. Mix well, and when it starts to brown, sprinkle the green curry and mix again.

3- Pour in the coconut milk and the chicken stock, stir well and let it reduce on a low heat. You can then mix the preparation once it has reduced well to make a kind of curry paste, or mix well and leave it liquid enough to make a green curry sauce (option chosen here).

4- Put the shrimps to be cooked with the remaining onion in a drizzle of oil. When they start to brown, add the tomatoes and honey. Mix well and add your green curry paste or green curry sauce.

5- Simmer for 5 to 10 minutes, add salt and pepper, and it’s ready!

6- Serve with some fresh coriander and lime juice.
