Delicious chipotle cauliflower tacos ready in 30 minutes and with less than 10 ingredients. An amazing and quick recipe to enjoy for lunch.

These vacations nothing like enjoying delicious meals at home that also contain 100% vegetable and healthy ingredients. Besides, this recipe is very economical and yielding, so it is also a basic recipe for the weekly menu.

The preparation of these vegan tacos is extremely simple. As easy as mixing all the ingredients in a bowl and then cooking them in the pan.

I served my tacos with some homemade chipotle and cashew sauce, but you can add whatever sauce or toppings you like.


1 head of white cauliflower
1 cup finely chopped white onion
1 clove garlic, finely chopped
2-3 tablespoons chipotle sauce (to taste)
1 teaspoon salt
1/2 teaspoon olive oil.
To serve:
Corn tortillas
Chipotle sauce (optional)
Chipotle-flavored vegan mayonnaise (optional)
Avocado (optional)
Cilantro (optional)
Roasted cambray onions (optional)



Cut the cauliflower into small pieces, you can either shred the cauliflower or slice it. You don’t need it to be perfectly chopped, just cut it into small pieces.
Chop the onion and garlic as directed.

Place the cauliflower, onion and garlic in a large bowl and add the chipotle sauce and salt. Using a spatula or your hands, stir well until everything is well coated.
Place a large skillet over high heat. Add a drizzle of olive oil, when hot add the cauliflower mixture already marinated in the chipotle sauce. Let it cook on one side for 4 minutes, when it starts to brown on the edges, stir the mixture and let it cook for another 3 minutes. Repeat this operation until most of the edges are browned and the cauliflower is cooked.
Serve in corn tortillas and add toppings and garnishes of your choice.
