Chinese lacquered duck with 5 flavors




1 Barbary duck

30 g of spices

1 pinch of cumin

1 onion

1 clove of garlic

4 cl of soy sauce

4 cl of liquid honey

1 pinch of glutamate




1- Induce the duck entirely, inside and outside of the 5 spices mixture. Sprinkle with salt. Then prick it with a fork on all sides and set aside.

2- Preparation of the spice paste for the duck :

3- Peel and finely chop the onion and garlic, crush them until you obtain a paste. Add the rest of the 5 spices, soy sauce, honey and cumin to this paste, then mix vigorously to obtain a very homogeneous paste.

4- Brush the duck with the spice paste (inside and outside), then let it dry for about 2 hours.

5- Preheat your oven to 150┬░C (thermostat 5).

6- Oil the baking tray of your oven and place the duck on it.

7- Put the duck in a hot oven. After 45 minutes of cooking, rebadigeonner the duck with spice paste.

8- After 1 hour and a half of cooking, it should come out crispy and golden brown (caramel color).
