BLUEBERRY BANANA PANCAKES

 

INGREDIENTS

  

1 banana approx. 100 g without peel

50 g coarse ground oat flakes

2 tbsp. linseed

6 tablespoons water

40 g blueberries fresh or frozen

a pinch of cinnamon

some coconut oil for frying

HOW TO MAKE IT

 

Heat the coconut oil.

Peel the banana and mash it in a small bowl with a fork.

Stir in oats, flaxseed, water and cinnamon until a sort of batter forms.

Spoon four pancakes from the batter into the hot pan. Smooth out the batter with the spoon.

Turn the temperature down and bake the pancakes for about 3-4 minutes. They need to be browned enough so you can flip them easily.

Then flip and bake for 3-4 minutes from the other side.
