VEGAN JACKFRUIT NACHOS

 


 Incredible vegan jackfruit nachos satisfy any craving and are a delicious and fun vegan lunch to make and share at home.

Nachos are a favorite food for new vegans and veteran vegans alike. Best of all, being vegan you can make nachos in a thousand different ways.

You can prepare nachos with vegan cheese or without cheese, with beans, with yaca or with seitan or soy; you can add the vegetables you like the most and vary the type of tortilla chips you want to use. Nachos are a dish we can always customize and that's why they are a favorite at home.

VEGAN JACKFRUIT NACHOS
These nachos are made with jackfruit. A few weeks ago I received a jackfruit of 17kg! and as usual with a fruit that size, the operation took 2 and a half hours and the help of my husband. Now we have jackfruit for about a month.


INGREDIENTS
For the yaca pibil
2 cups of hydrated or fresh yaca (approx 400gr)
40gr achiote paste or red recado
1 sour orange
1 lemon
1 teaspoon garlic powder
1/2 teaspoon ground oregano
To cook yaca pibil
Salt to taste
3/4 cup purified water
To serve
4 cups corn tortilla chips
1 1/2 cups black beans in beans or ground beans
Pico de gallo to taste (tomato, onion, cilantro and lime)
Guacamole or avocado to taste
Vegan cheese (optional)
Jalapeños (optional)

INSTRUCTIONS

STEP 1
In a bowl, prepare the marinade by mixing the achiote paste, sour orange, lime, garlic powder and oregano. Mix well.

STEP 2
Add the hydrated yaca and mix well. Marinate for 1 hour or overnight if possible.

STEP 3
Prepare your favorite toppings, beans, guacamole, pico de gallo, vegan cheese, etc.

STEP 4
To cook the yaca use a non-stick skillet over medium heat. Place the marinated jackfruit and add the water. Mix well and cook for 10-15 min or until the water has evaporated completely. Stir constantly.

STEP 5
Increase the heat to maximum power and cook for 2 more minutes just to brown some parts.

STEP 6
Serve a bed of tortilla chips, add beans and vegan cheese if desired. Top with your prepared yaca and add toppings such as guacamole, pico de gallo and jalapeños.

STEP 7
This recipe serves 2 large plates or a sharing platter.
