Thai grilled chicken


In Thai cuisine, recipes with chicken are very popular. In Thailand people love chicken. Whether spicy, sweet and sour, or with coconut, the possibilities are manifold. The most important ingredient is the lemongrass. Try this Thai chicken recipe and feel like on vacation in Thailand. At least in culinary terms.

For this you need:

2 chickens

For the marinade:


200 ml of soy sauce

60 g brown sugar

6 garlic cloves

3-4 sticks of lemongrass

4 tsp. grated ginger

2 tsp black pepper

Juice of a lime

For the Teriyaki sauce:


2 cloves of garlic

25 g ginger

1 tablespoon high-quality cooking oil

1 tablespoon sesame oil

50 g brown sugar

150 ml of soy sauce

200 ml white wine

1 tsp sesame

Also:


8 bamboo skewers

Grill

That's the way it works:

1.) First of all, devote yourself to the marinade: beat the lemongrass flat with a pot or the back of a knife and then cut it into rings.

 


2.) Then cut the garlic cloves and ginger into small pieces and put everything in a mortar. Add the peppercorns and crush everything. Finally add the brown sugar, soy sauce, and lime juice and mix everything together.

3.) Cut 2 chickens in the middle of the breast and flip them open. Place them on a board with the skin side up and press the meat so flat that the chickens lie flat on the board. Then spread the marinade on the meat and let it soak in overnight.

4.) Put the chickens on aboard the next day and clamp a bamboo skewer between each thigh and wing. Put the other two skewers under the meat and fix them with some binding wire to the upper two. Now grill the meat at low heat for about 45 minutes, turning it steadily.

5.) Prepare the teriyaki sauce as follows: Roast the sesame seeds in a pan and take them out again. Finely chop ginger and garlic and fry them both in oil. When they have gained some color, add the sesame oil and sugar and let the sugar melt. Then pour in the soy sauce and white wine and let everything boil down to the desired consistency. Finally, add the sesame seeds and serve the sauce with the chicken.


This chicken can of course also be prepared in the oven if you don't have a grill. With the homemade Teriyaki sauce, this chicken is a Thai delight.
