rogues with currant jelly

 

 

The rogues with currant jelly are the perfect treat for the Christmas season. Thanks to the fruity filling they taste simply irresistible.


360 Grams of wholemeal flour

270 grams (Byodo Baking Oil Exquisite)

50 milliliters of orange juice

160 grams of sugar

1 Egg

20 grams vanilla sugar

1 Pinch of Spekulatius spice

1 Tonka bean (grated)

(abrasion of a ½ lemon)

(abrasion of a ¼ orange)

100 grams of almonds (ground)

120 gram currant jelly

Powdered sugar (for dusting)


Preparation

1-  Knead the ingredients in a food processor or by hand to form a dough and let it rest in the refrigerator for at least 2 hours. Roll out the dough on a floured surface and cut out approx. 25-30 bases and lids. (TIP: cut out small stars or circles on the lids so that the jam can be seen later)

2- Put the cookies on a baking tray with baking paper and bake at 165° C for about 12-14 minutes.

3- After baking, coat the bases with redcurrant jelly and stick them together with the lids. Finally, dust with powdered sugar.
